Mercado Central Santiago: The Essential Fish Market Guide

The Mercado Central is Santiago's most celebrated food destination — a cast-iron market hall in the city centre, its ornate Victorian structure built in Scotland and shipped to Chile in 1872, where the centrepiece restaurant circle surrounded by fish market stalls serves Chilean seafood in conditions of maximum freshness to a crowd that ranges from Santiago families to visiting dignitaries. It is one of South America's great market dining experiences and an essential Santiago morning.

The seafood options at Mercado Central's central restaurant tables are remarkable in their Chilean specificity — congrio (conger eel), reineta (Pacific pomfret), corvina (sea bass), and the extraordinary locos (Chilean abalone) that are a protected and prized luxury, alongside centolla (king crab) and machas (razor clams) that arrive from Patagonia and represent Chile's coldest, cleanest waters. The ceviche, while less associated with Chile than Peru, is excellent here when made fresh with Chilean ingredients.

The market operates at its best from Tuesday through Saturday, with Sunday being the most crowded (and consequently most chaotic) day. Arrive before noon for fresh selection and before the tour groups arrive; local Santiaguinos tend to eat at the market for weekday lunches rather than weekend visits, suggesting the authenticity of the experience is best captured midweek. Negotiate prices at the surrounding market stalls for shellfish to take away rather than accepting the first price offered.
